Applesauce Pancakes

Ingredients
2 c. Bisquick
2 eggs
1 c. applesauce
1 tsp. cinnamon
1 tsp. lemon juice
1/2 c. milk

Directions
Beat all ingredients until smooth. Bake on griddle until brown. Use about med high heat. If it's not a non-stick griddle or pan, you will need a small amount of oil spread around the pan. Get the griddle hot (you know it's hot when a few drops of water "dance" on it.) The top of the pancake should have bubbles and look a bit dry before you flip it. It the bottom gets too dark before the top is setting, you need to turn the heat down a bit.

Bran Muffins

Ingredients
1 c. boiling water
1 c. 100% Bran (Post)
1/2 c. vegetable oil
1.5 c. sugar
2 eggs, beaten
2 c. buttermilk
2.5 c. flour
2.5 tsp. soda
1 tsp. salt
2 c. All Bran (Kelloggs)

Directions
Pour boiling water over 100% Bran. Cream oil and sugar. Add eggs, buttermilk and 100% Bran. Add remaining dry ingredients all at once. Fold just until ingredients are moistened. Place covered bowl in refrigerator for at least 4 hours or up to two weeks before baking. Bake in greased muffin tins. Bake at 375 for 15-20 minutes. Serves: 2 dozen muffins

Coffee Cake

Streusel
Ingredients

1/2 c. brown sugar
2 Tbs. margarine melted (45 sec on power 5)
2 Tbs. Bisquick
2 tsp. cinnamon
1/2 c. chopped nuts, if desired

Directions
Mix sugar, Bisquick & cinnamon together. Blend in melted butter. Stir in chopped nuts.

Coffee Cake
Ingredients

2 c. Bisquick
2/3 c. milk
2 Tbs. sugar
1 egg, beaten

Directions
Grease 8" round or square pan. Mix all ingredients in bowl. Beat with spoon for 30 sec. Spread a little over 1/2 of the batter in the pan - be sure entire bottom of the pan is covered. Sprinkle on 1/2 of the streusel topping. Drop remaining cake batter, by spoonful, over the streusel. Top with remaining streusel. Bake at 350 for 18-22 minutes or until toothpick inserted in center comes out clean. Serve warm.

Macaroni and Cheese

Ingredients
3 qt water (cold)
2 c. macaroni
1 tsp. salt
1/2 lb. grated American cheese
1/3 c. milk

Directions
Boil water in a kettle. Add macaroni. Cook at gentle boil, stirring occasionally, for about five minutes or until noodles are ready. Drain to colander, shake water out. Turn burner to low. Add milk, noodles, and cheese in that order. Cook for about five minutes, until bubbling, stirring occasionally. Adjust burner as necessary. Serves 3.

Brownies

Ingredients
1+1/3 cups butter or margarine, softened
2+2/3 cups sugar
4 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon salt

Directions
In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix
well. Combine flour, cocoa and salt; add to the creamed mixture and
mix well. Spread into a greased 13"x9"x2" baking pan. Bake at 350
degrees for 25-30 minutes or until the top is dry and the center is
set. Cool completely.
If you wait until the toothpick test comes out clean, they will
be a bit on the dry side so you'll have to play that by ear.
